Which flour is suitable?
All purpose flour:When you purchase flour,you may get all purpose flour after you go to a few supermarket.
(If you can't get it,mix up weak flour and hard flour one half for each.
rolling pin:
long pin is useful.a pin which has rubber band is inconvenient.
how to make udon
1.dissolve salt in water.
2.
mingle salt water and all purpose flour in bowl.


3.knead flour and form dough into oval.

4.
wait an hour at room temperture.(if you are not going to consume immediately,
you can leave dough about two days.
dough left for some days can be eaten but it is not chewy.
aging does not progress in refrigerator.)

5.take dough out,and knead strongly on chopping board.

6.wait ten minutes.
7. stretch the dough with a rolling pin on chopping board.
If you don't have chopping block,you can use cling film.

sprincle weak flour on dough not to abhere to other part.

8.
roll out the dough to 3mm.(if dough is too big,divede the dough into two with scissors.)

9.
fold a dough into three or four.one third before divid dough.

10.
sprinkle weak flour over pre-boiled noodles not to stick each other.
(you can preserve udon at this time.)

11.
boil udon in pot for ten minutes.
(stir with chopstick sometimes not to stick to the bottom of the pot.)

12.
Linse the noodle in a strainer, and drain it.

13.
put the noodle in the bowl with ice water or water noodle in strainer.
then,drain the water with strainer.

14.
When you want to save the noodles in the refrigerator,you should separate the noodles from each other.
Texture will be inferior after long storage.
Digression
(Udon before boiled surprisingly does not rot.But,that is unwarrented.)to preserve before boiled is better than after.
after boiled,noodles stick to each other.
you should purchase specialized knife(about 20 dollers).
you don't have to stick with the price of udon knife unlike sushi.
suitable kind of flavoring is few,
so you must buy noodle soup(mixture of dashi、soy sauce、mirin and sugar)
sesami dressing might be a substitution for noodle soup.
